A Danish bakery classic with more than a century of history

Some cakes are so special that they almost make you want to bring out your finest coffee cups and turn an ordinary afternoon into a celebration.

In Denmark, the Othello cake is definitely one of them.

This traditional Danish layer cake dates back to the early 1900s, with a reference to it appearing in a Danish pastry book as early as 1902.

The cake is believed to have been named after the main character in William Shakespeare’s famous tragedy Othello. And while cake trends have come and gone over the past century, this particular dessert has never really disappeared from Danish bakeries.

For generations, Danes have enjoyed its combination of soft sponge cake, vanilla cream, chocolate, and whipped cream.

It’s the kind of cake that many people in Denmark associate with birthdays, celebrations, and visits to traditional pastry shops.

And now, thanks to Danish baking enthusiast MickiCheng, you can recreate this beautiful classic in your own kitchen.

Micki regularly shares impressive homemade baked goods on Instagram, but he seems particularly pleased with this creation.

And looking at the finished cake, it’s easy to understand why.

So many delicious layers in one cake

What makes Othello cake particularly special is the number of different flavors and textures packed into every slice.

The traditional version features layers of sponge cake, vanilla custard, whipped cream, and a glossy chocolate topping, often finished with a decorative band of marzipan around the outside.

Micki’s homemade version takes things even further.

Between the freshly baked sponge cake layers, you’ll find raspberry jam, crushed almond macaroons, and homemade vanilla custard folded together with whipped cream.

The raspberry jam adds a pleasant fruity contrast to the rich cream, while the crushed macaroons provide another layer of flavor and texture.

Once all the layers have been assembled, the cake is placed in the refrigerator to set.

Then comes the finishing touch that gives Othello cake its unmistakable appearance.

A band of marzipan is wrapped around the sides, the top is covered with a beautiful glossy chocolate glaze, and decorative swirls of whipped cream complete the presentation.

The result is a cake that looks like something you’d expect to find in a professional Danish pastry shop.

It’s certainly more ambitious than baking a simple sheet cake, but Othello cake was never meant to be an ordinary everyday dessert.

This is the kind of cake you place proudly in the center of the table.

A weekend baking project worth trying

Micki suggests making this traditional Danish cake as a weekend baking project, and that seems like the perfect approach.

There are several steps involved, and each deserves a little attention.

First, the sponge cake layers need to be baked and divided. Then comes the homemade vanilla custard, which must be cooked and cooled before being combined with whipped cream.

After that, the cake is carefully assembled with its different fillings before being chilled.

Finally, the marzipan, chocolate glaze, and whipped cream decorations bring everything together.

In Micki’s recipe, the cake is prepared using an 8.3-inch (21 cm) cake pan.

Taking your time during assembly is particularly important if you want those beautiful, clearly defined layers when you cut the first slice.

But that’s also part of what makes baking a cake like this so rewarding.

You’re not simply mixing a few ingredients and placing a pan in the oven. You’re creating something that has been part of Danish baking traditions for more than a century.

And when you finally cut into the finished cake, all that effort becomes worthwhile.

Soft sponge cake, creamy vanilla filling, fruity raspberry jam, almond macaroons, sweet marzipan, rich chocolate, and fluffy whipped cream all come together in one spectacular dessert.

It’s difficult to imagine a more fitting cake for a special occasion.

Some recipes need to be rediscovered after falling out of fashion.

But Othello cake is one of those Danish classics that never really went away.

And perhaps that’s the best reason to try making it yourself.

Happy baking, and enjoy!
