Could this be the perfect sauce?
Ask ten Danes about their favorite sauce, and you’ll probably get ten different answers. Some will always choose traditional Danish brown gravy, while others swear by béarnaise or peppercorn sauce.
But there’s one sauce that has a special place on my list, and that’s a really good whiskey sauce.
It has a little bit of everything. There’s sweetness, acidity, richness, and of course, that distinctive flavor from the whiskey itself. And because it works with so many different meals, it’s definitely a recipe worth learning by heart.
Recipe creator Mads G Lunde says he often meets people who aren’t quite sure which sauce to serve with their food. That’s exactly why he decided to share this recipe, which transforms a handful of everyday ingredients into something truly delicious.
The ingredient list includes shallots, garlic, rosemary, balsamic vinegar, whiskey, chopped tomatoes, and heavy cream.
What makes it particularly interesting is just how much flavor you can develop from ingredients that many people already have in their kitchens.
It’s all about building layers of flavor
A great whiskey sauce isn’t simply cream mixed with a splash of whiskey.
And that’s exactly what makes Mads’ recipe so interesting. Instead of throwing everything into a saucepan at once, the flavors are carefully developed step by step.
First, finely chopped shallots and garlic are gently cooked in a little butter until softened and translucent.
Sugar and dried rosemary are then added, allowing everything to cook until the mixture begins to turn slightly golden.
Next comes the balsamic vinegar, which is reduced by approximately half. This concentrates its flavor and creates a wonderful balance between sweetness and acidity.
The whiskey is then added and reduced in the same way.
Only after these steps are complete do the chopped tomatoes, heavy cream, and beef stock go into the saucepan.
The sauce is left to simmer gently for around 20 minutes, allowing all the different flavors to come together.
This is where a little patience really pays off.
As the liquid reduces, the flavors become more concentrated, resulting in a richer and more balanced sauce.
Finally, everything is blended with an immersion blender until smooth.
For me, that silky texture is one of the things that makes a really good whiskey sauce so appealing.
If you happen to have some high-quality homemade beef stock available, it can add even more depth. But the beauty of this recipe is that you can achieve excellent results using ordinary ingredients from your kitchen.
A sauce that can transform an ordinary dinner
One of the best things about knowing how to make a few really good sauces is that planning the rest of dinner suddenly becomes much easier.
And whiskey sauce is one of those recipes I could happily return to again and again.
It’s particularly delicious with a juicy steak and potatoes, but it also works wonderfully with other meat dishes and a variety of potato sides.
That makes it the kind of recipe worth saving for those evenings when your meal just needs something extra to bring everything together.
Before serving, season the sauce with salt and pepper.
If you prefer a more intense flavor, you can let it reduce a little longer. And if you’d like a thicker consistency, a small amount of cornstarch can help.
The consistency is just as important as the flavor.
A good whiskey sauce should be thick enough to coat your food without becoming so heavy that it feels more like a cream than a sauce.
Of course, béarnaise, brown gravy, and peppercorn sauce will always have their loyal fans in Denmark.
But if I could only choose one sauce for those dinners when I want something a little extra special, whiskey sauce would be very high on my list.
And this delicious version from Mads G Lunde is an excellent place to start.
Enjoy!
Frequently asked questions
What can you serve with whiskey sauce?
Whiskey sauce pairs particularly well with beef and potatoes. However, its rich, creamy flavor also makes it an excellent accompaniment to many other meat dishes and meals where you’d normally serve a creamy sauce.
Why should you reduce the whiskey?
In this recipe, the whiskey is added after the balsamic vinegar and allowed to reduce before the tomatoes and cream are added. This helps concentrate its flavor and allows it to become a more balanced part of the finished sauce.
Can you thicken whiskey sauce with cornstarch?
Yes! Once the sauce has been blended and seasoned, you can either allow it to reduce further or add a little cornstarch to achieve a thicker consistency.
