Recipe for fatayer (stuffed bread)

Delicious and flavorful pies from the Middle East.

They are typically filled with meat, but they can easily be filled with cheese as well.

I have a recipe for both here.

Ingredients

Dough

  • 25 gram Yeast
  • 450 gram Flour
  • 38 gram Sugar
  • 28 gram Oil
  • 6 gram Salt
  • 250 gram Water

Suggested filling (meat)

  • 300 gram Beef
  • 2 pcs. Onion large
  • 2 pcs. Tomato or a handful of cherry tomatoes
  • 7 spices

Suggested filling (cheese with zaatar)

  • Grated cheese mozzarella
  • Feta
  • Zaatar
  • Oil

Instructions

Dough:

  • Dissolve the yeast in a little water, then add the rest of the water.
  • Then add flour, sugar, oil, and salt (in this order).
  • Knead the dough, and let it rise for an hour.

Fill with meat

  • Onion and tomato with spices are placed in a food processor and blended finely (chop the vegetables thoroughly if you don't have a food processor).
  • Then add the meat, along with more spices, and blend again.

Fill with cheese

  • Za'atar and oil are mixed together, and the mixture is spread on a small portion of dough that has been rolled into a small round circle.
  • Then add the two cheese mixtures on top, and close the dough.
  • The same is done with the meat, where only the meat is added and then the dough is closed.
  • Finally, brush them with egg.
  • Give them 10-15 minutes at 200 degrees Celsius (392 degrees Fahrenheit) on convection.
