Recipe for thai curry

T H A I – C U R R Y ♥️

After requests for easier dishes, I have created a super easy version of Thai Curry, and it’s so delicious!

I’ve used ingredients that you can just throw into the pot, making the dish both easy and quick to make!

Ingredients

  • 550 gram Chicken
  • 2 pcs. Onion
  • 1 pcs. Scallion - Spring Onions
  • 1 package Frozen vegetables to taste
  • 30 gram Red curry paste
  • 1 pcs. Lime
  • 7 gram Curry
  • 3.5 gram Paprika
  • 2.8 gram Garlic Powder
  • 1 can Coconut Milk I used light
  • 0.5 pcs. Cream cooking cream
  • Peanuts handful
  • Cashews 2 handfuls

Instructions

  • Start by chopping onions and spring onions.
  • Add a little oil to the pan and heat it up.
  • Then sauté the onions and spring onions until they are slightly soft.
  • Next, add garlic powder (or one clove of garlic), paprika, and curry powder, and stir well.
  • Then add 2 large teaspoons of red curry paste.
  • Next, add the chicken which has been cut into small pieces, and stir so the chicken is coated with the spices.
  • Let the chicken cook on medium-high heat for about 5 minutes.
  • Make sure the chicken is browned all over.
  • Then add the frozen vegetables and cook with the chicken until thawed.
  • Now add the juice of one lime.
  • Once thawed, add coconut milk and cooking cream.
  • Stir well, then add the nuts.
  • Let the dish simmer for 10-12 minutes and enjoy it with a bowl of rice ?♥️ .

Notes

DID YOU KNOW?
Frozen vegetables are NOT less healthy than "fresh" vegetables - quite the opposite! Frozen vegetables are actually healthier than fresh ones because they retain all their good nutrients for longer. So, eat frozen vegetables with a clear conscience ?
