Recipe for apple butter
APPLE BUTTER WITH LEMON AND ROSEMARY
Light and delicious vegetarian spread, perfect for packed lunches.
We have the recipe from the book: “Green Lunchboxes“, written by Louisa Lorang. She writes the following about the recipe:
“Absolutely wonderful, smooth apple spread. Lovely on a whole grain roll or on rye bread with aged cheese.”

Equipment
- Cutting Board
- Chef'S Knife
- Potato Peeler
- Pot
- Food Processor (Option 1)
- Mini Choppers (Option 2)
Ingredients
- 0.5 kg Apples
- 2 gram Lemon Zest finely grated
- 30 gram Lemon Juice
- 50 gram Cane Sugar
- 2 pcs. Rosemary Sprigs
- 15 gram Butter
Instructions
- Peel the apples, and discard the cores.
- Cut the apples into rough cubes, and place them in a pot with lemon zest, lemon juice, and sugar.
- Let the compote simmer for 5-10 minutes, until the apples are almost tender.
- Add the rosemary sprigs, and let them simmer for an additional 5-10 minutes.
- Remove the rosemary sprigs, and discard them.
- Put the warm apples into a food processor or mini chopper, and blend.
- Add the butter, and blend the apples into a smooth consistency.
- Let the apple spread cool before serving.
Notes
TIP: There is sugar in this spread, but do not panic. Let it be a sweet surprise.
