Recipe for falafel burger

You are probably familiar with falafel, which are small, crispy “chickpea fritters” from the Middle East. They are typically served in pita bread, where they replace meat accompanied by various types of vegetables and dressings.

Here, we have used the “mixture” to shape burger patties and fried them in oil until they are crispy and delicious. The result is a falafel burger filled with the tasty falafel patties as well as bacon, cheese, and pickled red onions.

Of course, you can leave out the bacon for a purely vegetarian version – or you can replace the bacon with crispy baked kale – that’s not bad either!

Course: Dinner
Cuisine: Mediterranean Sea
Prep Time: 1 day 8 minutes
Cook Time: 2 hours 20 minutes

Ingredients

  • 400 gram Chickpeas dried
  • 2 bunches Broad leaf parsley
  • 1 pcs. Onion
  • 3 cloves Garlic
  • 3 pcs. Egg
  • 12 gram Salt
  • 2.7 gram Chili Powder
  • 6 gram Cumin
  • gram Grate
  • 45 gram Lemon Juice
  • 6 gram Lemon Zest finely grated - optional
  • 0.5 l Oil for frying

Instructions

  • Soak the dried chickpeas in plenty of water for at least 8 hours and preferably a day.
  • Drain the chickpeas and rinse them thoroughly in a sieve. Let them drain well.
  • Put the soaked chickpeas and the other ingredients in a blender or food processor.
  • Blend everything well together into a cohesive "dough."
  • Shape the mixture into burger patties.
  • Place the patties on baking paper on a flat surface and put them in the freezer for a couple of hours.
  • Take the chickpea patties out of the freezer about 10 minutes before they are to be cooked.
  • Deep fry them for about 5 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
  • Place the finished burger patties on absorbent paper.

Serving:

  • Use the burger patties as filling in a burger. Feel free to bake your burger buns yourself following this recipe. Try, for example, our suggested fillings:
  • Homemade dry salted bacon - see the recipe here.
  • Homemade pickled red onions - see the recipe here.
  • Homemade ketchup - try our delicious and super easy recipe, which you can find right here.

Notes

Take the patties out of the freezer 10 minutes before you want to fry them. We took them out 1 hour before with the result that the patties were not cohesive enough and therefore difficult to make look nice. At the same time, the frozen core also allows for a longer frying time, so the surface of the finished patties becomes crispier.
