Recipe for homemade pasta

Delicious and homemade pasta is always a hit.

It only requires 3 ingredients and a bit of patience. I still don’t have a pasta machine, so you can easily make tasty and delicious pasta without one. I use a rolling pin that helps me, and I actually think it’s quite cozy to use it instead of a machine.

Since pasta only requires three ingredients, I recommend not skimping on quality, as a good egg and a good type of flour make a big difference. I almost always use tipo 00 flour, but good durum wheat flour or all-purpose flour can also be used.

Homemade pasta

Author: Anette Søstrøm Asmussen
Prep Time: 40 minutes
Cook Time: 4 minutes

Ingredients

  • 2 pcs. Egg
  • 200 gram Wheat Flour
  • 27 gram Coarse salt

Instructions

  • Normally, we use flour types like Tipo 00 or durum wheat to make pasta, but I've always wanted to try making it with plain wheat flour, which resulted in this recipe. It tasted wonderful, so this won't be the last time I do it.
  • Pour the flour onto the kitchen counter and make a well in the center of it.
  • Crack your eggs into the center of the flour and gently whisk them together with a fork. Gradually mix a bit of the flour into the eggs with one hand, while the other hand whisks the eggs and flour together.
  • When it’s no longer possible to whisk more flour into the eggs with the fork, use your hands to gather the dough.
  • When the dough is gathered, knead it well with your hands. Use the heel of your hand to fold the dough over itself until the dough has a smooth surface when stretched. This might take some time, but it’s worth all the effort.
  • Let the dough rest for 30 minutes, wrapped in a bag or plastic wrap. I usually let it rest on the kitchen counter with a shower cap placed around the dough.
  • Once the dough has rested, roll it out on a floured surface. Use plenty of flour – much more than you think you’ll need.
  • Roll the dough as thin as possible with a rolling pin.
  • When the dough can’t get any thinner, try rolling it onto your rolling pin, well dusted with flour. Roll your rolling pin a few times over the counter while gently pressing down.
  • Unroll the dough from the rolling pin and give it another roll if you want the dough even thinner.
  • Sprinkle the dough generously with flour and fold it together. This makes it super easy to cut thin pasta strips lengthwise.
  • Since the pasta was to be used immediately, it was dusted with a bit of flour and separated.
  •
  • Bring a pot of water and salt to a boil. When the water boils, add the pasta.
  • Cook the pasta for 4 minutes and drain it.
  • The pasta is ready to serve.

Notes

If the pasta is not to be used immediately, it should be tossed in plenty of flour until needed. It’s a good idea to toss the pasta occasionally to ensure it doesn't stick together.
