Recipe for homemade chili mayonnaise
Chili mayo is something that just goes with everything, but doesn’t almost all mayo?
I think it’s so good with burgers and fries, and I could also see it in a shrimp salad—you could just keep going.
Here is the recipe—hope you will try it out. Remember, chili is a matter of taste regarding how spicy you want it.
I’ve used the chili sauce that’s in the picture, and it’s relatively mild, but you can experiment a bit yourself.

Ingredients
- 3 pcs. Egg Yolk
- 30 gram Vinegar
- 5 gram Dijon Mustard
- 276 gram Rapeseed Oil
- 10 gram Chilli Sauce
- 15 gram Ketchup
- 2.3 gram Paprika
- Salt and Pepper
Instructions
- 1. Whisk egg yolks, mustard, vinegar, and salt until thick and white. 2. Then, gradually whisk in the oil in a thin stream; it's important to do this slowly and steadily to avoid splitting. 3. Once the mayo is good and thick, season it with chili sauce, ketchup, paprika, salt, and pepper.
