
Recipe for homemade curry salad
Curried salad is just so good when it’s homemade! It’s obviously a must-have on the Christmas lunch table and on top of herring, but it’s also great for topping a potato sandwich. Or for adding to a classic club sandwich filled with chicken and crispy bacon!
So if you’re in charge of lunch, it makes perfect sense to whip up a curried salad—it takes no more than fifteen minutes!
Here is my recipe for a homemade curried salad that impresses every time.

Homemade Curry Salad
Ingredients
Mayonnaise:
- 2 pcs. Egg Yolk
- 10 gram Dijon Mustard
- 15 gram Apple Cider Vinegar
- 3 gram Salt
- 10 turns Pepper from grinder
- 276 gram Rapeseed Oil approximately
Curry Salad
- 50 gram Sour Cream 1/2 dl
- 35 gram Honey
- 7 gram Curry preferably World’s Best Curry Powder Project
- 2 pcs. Egg soft-boiled
- 1-2 pcs. Apples pigeon, Ingrid Marie, or Belle de Boskoop
- 1 pcs. Red Onion small
- 1 glass Capers
- 20-30 pcs. Cornichons
Instructions
- Whisk egg yolks, Dijon, vinegar, salt, and pepper together in a bowl (plastic or glass).
- Add the oil a little at a time while whisking.
- Add oil until you have a very thick mayonnaise.
- Add crème fraîche, honey, and curry powder and mix well.
- Season to taste with salt and pepper.
- Cut eggs and apples into cubes.
- Chop onions, capers, and cornichons roughly.
- Mix everything together with the mayonnaise.
- Refrigerate until ready to serve. It can advantageously be made a day in advance to let the curry flavor develop more.
