For me, it brings back lots of childhood memories from the local bakery. Once you’ve learned the proper folding technique, it’s not that difficult to get a beautifully risen and airy milk bread in your own kitchen.

Cook Time: 30 minutes

Ingredients

  • 0.5 package Yeast
  • 500 gram Whole Milk
  • 12.5 gram Sugar
  • 18 gram Salt
  • 780 gram Wheat Flour
  • 50 gram Butter
  • Flour For shaping
  • Birches Blue. For decorating.
  • 50 gram Milk For brushing

Instructions

  • Warm milk and butter in a saucepan.
  • The butter should melt and the milk should be around 37 degrees Celsius (99 degrees Fahrenheit).
  • Pour it into a mixing bowl.
  • Add yeast and sugar and stir.
  • Let it stand for 5-10 minutes.
  • Add salt and stir.
  • Add about 100 grams of flour at a time while stirring vigorously.
  • Run it on your mixer for up to 10 minutes, so it gets kneaded well.
  • Cover the bowl with a kitchen towel and let it rest for about an hour.
  • Sprinkle flour on your kitchen counter and place the dough there.
  • The next part about folding can be seen described in pictures in this French bread recipe.
  • Use your hands to flatten the dough into a rectangle.
  • Fold the ends towards the middle and press them together.
  • Then roll the whole thing together like a sausage from the top.
  • Place the dough in a bread tin lined with baking paper. The seam of the dough should be on the bottom.
  • Let it rise for 30 minutes, preferably under a clean kitchen towel.
  • Score the bread with a knife crosswise.
  • Brush the top with milk and sprinkle blue sesame seeds on top of the bread.
  • Bake it in the oven at 250 degrees Celsius (482 degrees Fahrenheit) with fan for 10 minutes and then 20 minutes at 210 degrees Celsius (410 degrees Fahrenheit)
  • Enjoy.
