Recipe for savoury waffles with avocado and salmon
Savory waffles are a great alternative to rye bread or as a side dish for fish. I’m not the biggest fan of sausages and similar processed meats, so a combination with avocado, mayo, hot-smoked salmon, and these delightful savory waffles makes a perfect lunch for me.
The waffle batter is very easy to make and only requires a few ingredients.

Ingredients
- 100 gram Tipo 00 Flour Can easily be replaced with wheat flour
- 50 gram Lentil Flour Can easily be replaced with a coarse flour type.
- 20 gram Sesame Seeds
- 20 gram Linseed
- 30 gram Oil Neutral in taste
- 3 gram Salt
- 5 pcs. Egg
- Mayonnaise Preferably homemade or Miracle Whip
- Cold-smoked salmon
- Avocado
Instructions
- First, mix all the dry ingredients together in a large bowl - you can use a mixing bowl. Then add one egg at a time until you have a smooth and slightly fluid mixture. My eggs were small, so I needed to use 5 of them. Divide the mixture into portions, totaling approximately 400 ml. Our waffle iron is non-stick and there is oil in the batter, so you "just" need to pour the batter in. It makes 2 waffles at a time and typically takes 7-9 minutes to be fully baked. Let them cool on a baking rack afterwards. When they have cooled slightly, spread them with mayonnaise, thin slices of avocado, and shredded, cold-smoked salmon. Enjoy.
