
Recipe for berry crumble with skyr and berry compote
Delightful summery weekend breakfast; ice-cold vanilla skyr with warm, crispy berry crumble. It’s healthy, easy, and delicious! This crumble takes 3 minutes to mix and then just needs to go in the oven while you take a shower, set the breakfast table, or maybe whip up a quick berry compote for your morning bowl… That’s what I did today – it’s not necessary, but it tastes great, adds a bit of extra luxury, and can be done in a few minutes.
This crumble is without sugar and butter, so it’s quite healthy and perfect for breakfast, but it could also be enjoyed as a cake or dessert with a bit of vanilla cream or ice cream… No matter what, it is really easy and just tastes delightful.

Berry Crumble with Skyr and Berry Compote

Ingredients
Berry Crumble
- 200 gram Berry optional: fresh, frozen, or a mix
- 175 gram Muesli rolled oats or a mix
- 1 pcs. Ripe Banana mashed
- 4 gram Vanilla Sugar
- 21 gram Honey liquid or syrup
- 13.6 gram Coconut Oil
Berry Compote
- 150 gram Berry mixed, fresh or frozen
- 25 gram Sugar
- 2 gram Vanilla Sugar
- 15 gram Water
In addition
- Plain yogurt with vanilla flavor
- Almonds chopped
Instructions
Berry Crumble
- Spread the berries at the bottom of an ovenproof dish.
- Mix muesli, banana, vanilla sugar, honey, and coconut oil together and spread over the berries.
- Bake for 25 minutes in a preheated oven at 180 degrees Celsius (356 degrees Fahrenheit) (conventional oven).
Berry Compote
- Put the ingredients in a pot, bring to a quick boil, and let simmer until the berries are tender. Lightly mash with a fork.
Serving
- Put skyr in a bowl, top with crumble, berry compote, and chopped almonds - serve
