Recipe for sous vide striploin bacon cheese

A delicious gentleman’s burger made from striploin, bacon, and cheese spread with chili mayo.

Naturally pairs well with fries of all kinds.

Find a high-quality striploin – it’s worth it for the taste, tenderness, and flavor. Here, I used a Black Onyx striploin steak purchased from Steak-Out.dk from Ranger’s Valley.

Equipment

  • Sous Vide
  • Cutting Board
  • Chef'S Knife
  • Frying Pan
  • Oven
  • Gas Burner (Optional)

Ingredients

  • Striploin Steak
  • 1 package Bacon
  • 1 pcs. Leaf Lettuce
  • Tomato
  • Burger Bun
  • cheese high in fat

Instructions

  • Set your Sous Vide to 56 degrees Celsius (133 degrees Fahrenheit).
  • Chop your striploin into a coarse mince with a sharp knife. No need to use a meat grinder. Just chop it with the knife until you have a mass you can form by hand. Season it with a bit of salt and pepper here as well.
  • Place the patty in a vacuum bag and seal it using the “pulse” or “moist” setting. It shouldn't be vacuum sealed hard, as that will destroy the patty's shape. You may also vacuum seal a teaspoon in the bag to keep it from floating.
  • Place it in the water bath for an hour and a half.
  • In the meantime, you can prepare yourself a bit and fry some bacon.
  • When there are ten minutes left on the patty in the water bath, preheat your oven.
  • After an hour and a half, take the patty out of the bath and put the burger bun in the oven. Then take the meat out of the bag and pat it dry with paper towels. Now the burger patty just needs a sear. I use a blowtorch or a smoking hot cast iron pan with canola oil or ghee. Give it a maximum of 30-60 seconds per side so it doesn’t cook through inside.
  • Take the bread out of the oven. Place the cheese on top of the burger patty and melt it with a culinary torch.
  • Now you just need to assemble your burger...start with chili mayo on the bottom and top bun, then lettuce and tomato on the bottom, followed by the patty with the melted cheese. Lay the bacon on top, and close the burger. Optionally, insert a steak knife through the burger to hold it in place as I've done in the picture.
  • Optionally serve with fries.
