Recipe for creamy iceberg lettuce salad with corn and bell pepper
Colorful and simple salad that reminds me of spring. Fresh, creamy, delicious, and crisp all at the same time. Filled with crunchy bell peppers, soft roasted corn, fresh parsley, and chili peppers that give the salad a bit of an edge. All is tied together with a quick crème fraîche dressing that adds a bit of creamy goodness. On top, I have crispy garlic croutons, the recipe for which you can find here.
The quantities here are enough as a side for 4 people. We eat the salad with grilled chicken, minute steaks, meatballs, or fish – it goes well with almost anything. If you eat it as a main course, this recipe is enough for 2 people.
