Recipe for summer layer cake with light sponge, meringue, cream and fresh berries
I’ve been looking forward to sharing this recipe with you! An absolutely delicious and beautiful summer cake that is both easy and quick to make. It consists of light, confection-like layers each topped with a crisp meringue, a velvety vanilla cream between the layers, strawberry/rhubarb compote, and fresh sweet and tart berries on top – it tastes faaaantastic! At once fresh, sweet, summery, and simply delectable!
You CAN make your own compote – it’s not very difficult, but in a pinch, a good jam works just as well, and you can have this beauty ready in no time.
I hope you will be as crazy about it as I am! I think it will grace our table quite a few times over the summer.
